Now that spring has arrived, at least on the calendar, we can begin to make more plans for get-togethers with family and friends without fear of sudden snowstorms and the need to cancel the event. If you’re looking for a few new ideas to feed your guests, here are two you might like to try. This Deep-Dish Pizza and if just serving a dessert and coffee or other drink, these Strawberry Delight Cookies are sure to be a big hit.
Deep-Dish Pizza
1 package (1/4 ounce) active dry yeast
1 cup warm water (110 to 115 degrees)
1 teaspoon sugar
1 teaspoon salt
2 tablespoons olive or vegetable oil
2 1/2 cups all-purpose flour
1 pound ground beef, cooked and drained
14 thin slices of small pepperoni
1 can (10 3/4-ounces) condensed tomato soup, undiluted
1teaspoon each-dried basil, oregano and thyme
1 teaspoon dried rosemary, crushed
1/4 teaspoon garlic powder
1 small green pepper, julienned
1 can (8 ounces) mushroom stems and pieces, drained
1 cup (4 ounces) shredded part-skim mozzarella cheese
1/3 cup grated Parmesan cheese
In a large bowl, dissolve yeast in warm water. Add the sugar, salt, oil and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. Cover and let rise for 20 minutes.
On a floured surface, roll into a 13-inch x 9-inch rectangle. Transfer to a greased 13-inch x 9-inch baking pan. Sprinkle with cooked beef and pepperoni slices.
In a small bowl, combine soup and seasonings; spoon over beef. Top with green pepper, mushrooms, mozzarella cheese and Parmesan cheese.
Bake at 425 degrees for 20-25 minutes or until crust and cheese are lightly browned.
Strawberry Delight Cookies
1/4 cup butter, softened
8 ounce package cream cheese, softened
1 egg, beaten
1/4 teaspoon vanilla extract
1 (18 1/2 ounce) package strawberry cake mix
1 cup canned strawberry frosting
Blend together butter and cream cheese; stir in egg and vanilla.
Add dry cake mix 1/3 at a time, mixing well after each addition.
Cover and chill for 30 minutes.
Drop by teaspoonfuls onto ungreased baking sheets. Bake at 350 degrees for 10 to 12 minutes.
Place frosting in a microwave-safe bowl. Microwave for 15 to 30 seconds; drizzle over cooled cookies. Makes about 4 dozen.
